– The combination of almond flour and oatmeal

Carbohydrates are not bad for you at all: your body needs them! But it is better to skip this quick energy sugary carbs. The nice thing of almond flour is that it contains less carbs in comparison with wheat flour. 200 grams of almond flour contains 10 grams of carbohydrates and 200 grams of wheat flour contains 92 grams of carbohydrates. Next to this, almond flour is rich in unsaturated fatty acids! Because of the moisture content of almond flour it is ideal to combine with oatmeal. Together it creates a perfect structure, texture and taste of the banana bread. Obviously you can always play around with the another type of flour instead of oatmeal.

Instead of sugar we used medjoul dates in this recipe. Using the dates, you still give your bread the sweet flavour that is loved so much. But using natural sugars instead of using refined sugar. In this way you also get the other goodies from the dates: the fibers! That will make your body a lot happier.

– No butter or oils

For this healthy banana bread recipe, we didn’t use any butter or oils because the almond flour already gives that moisture and smooth texture. This recipe without butter or oils makes the banana bread much healthier!

Ingredients

    bananas
  • 120 g
    oatmeal
  • 60 g
    almond flour
  • 30 g
    grated coconut
  • 4
    medjoul dates (pitted)
  • 30 g
    nuts/seeds of choice(pecans, flaxseeds, pumpkin seeds, walnuts)
  • 3 tl
    baking soda
  • 1/2
    juice of a lemon
  • 2 ts
    cinnamon/chai/allspice
  • Pinch
    of salt
  • 3
    eggs (M)
  • Optional:
    Dark chocolate chunks!

HOW-TO

  1. Preheat the oven to 170 degrees Celsius.
  2. Mash the banana and medjoul dates together and mix in the eggs till it is airy and smooth.
  3. Add the oatmeal, almond flour, grated coconut, salt, nuts and spices to the egg mixture and mix together.
  4. When it is mixed add the baking soda and squeeze the lemon on top of the baking soda. Let it fizz for a second so it gets activated and eventually mix in.
  5. Pour the banana bread mixture in a with baking paper lined baking tray and bake for 40 minutes in the oven.
