This banana bread honey recipe will fulfil all your ‘sweet cravings’, but is also super sustainable. Of course our banana bread is made from saved bananas which makes us, together with you, fight against that sh*t load of food waste (YAS!). But did you know that honey is also a sustainable product? It is a by-product of the reproduction process of plants, fruits and vegetables; an essential process for the products that you buy in the supermarket. And so without those smart bees, this golden sweetness would not exist. So while you eat this, you are doing so well that you can give yourself that extra slice. Blame this one on us.

Ingredients

  • 1
    SUNT Banana bread (natural or choco)
  • 100 gr
    cream cheese (room temperature)
  • 30 gr
    butter (room temperature)
  • 65 gr
    honey
  • 25 gr
    icing sugar
  • 100 gr
    granulated sugar
  • 5 gr
    baking soda
  • Optionally:
    white chocolate (see tip!)

Recipe

  1. Line a bakingtray or ovendish with baking paper and set aside.
  2. In a small saucepan, mix 25 grams of honey together with the granulated sugar.
  3. Bring this mixture to a boil and stop stirring.
  4. When the colour of the mixture turns amber (after 2-4 minutes of boiling), place the pan away from the heat and mix in the baking soda quickly, using a whisk (if you have a sugarthermometer, boil the mixture till 150 degrees) . Be careful with your hands though; this mixture forms bubbles and temperature rises quickly.
  5. Place the mixture on the previously lined baking tray and let it cool down.
  6. In the meantime mix the cream cheese and butter smooth and airy.
  7. Add icing sugar and the remaining honey and mix until combined.
  8. Cut the bananabread in half horizontally, top the bottom half of the bread with half of the creamcheese mixture.
  9. Place the other half of the bread on top and cover it with the second half of the cream cheese.
  10. Break the honeycomb in pieces (not too small) and use it to decorate the banana bread.

TIP

Do you have some bubblewrap left at home? Melt some white chocolate and pour it over the bubblewrap. When it is cooled down, break in pieces of ±5 cm. Use it to decorate the banana bread, place the chocolate pieces between the honeycomb pieces. The chocolate now looks like a real honeycomb! Looks fancy, doesn’t it? Do you not have this at home? Just some chocolate chunks are also fun!
